Happy Fathers Day to the greatest Dad!
I started the morning off right with a great breakfast al fresco.
½ c Oat bran, a sprinkling of wheat bran, ½ c water, ½ of so delicious coconut milk, ½ banana, blueberries. I topped it with an almond butter sauce made from Ashley’s Cinnamon Maple Almond Butter, a splash of coconut milk, which I microwaved for 15-20 seconds. Her nut butters are truly EPIC, if you still buy your nut butters from a jar you need to dust off your food processors and make one immediately!
I felt great this morning. My legs weren’t sore at all, but my shoulder blades were a little tight. I attest my speedy recovery to this guy:
If you know me personally, you probably know my Sigg. It’s attached to my hip. We get separation anxiety. I probably drank 2-3 gallons on race day and I made sure to keep rehydrating thereafter. I chug water every day like it’s my job. Sadly, water-chugger doesn’t sound very impressive on a resume.
This weekend has been jam-packed with family visiting! My cousin, Jill, her fiancé, Matt, and their dog, Ollie, came to visit today. They’re getting married so soon!
Father’s day was spent watching the U.S. Open and barbecuing. There was lots of munching throughout the day.
Salad: Avocado, edamame, roasted corn, tomato, mushrooms
Tofu seasoned with cayenne and cumin sandwiched between onions, tomatoes, and mushrooms.
Dessert was a wild gingerberry tart from Puffs & Pastries. This pastry shop is a little hole in the wall on 36th street in Hampden, but it’s well worth the trip. The menu is very inventive too.
