Barbeque Mango Tempeh Deliciousness

This morning I return to physical activity! Today was my first workout since the race and the one place I’m feeling it at the moment is my knees. It’s probably just a combination of having ran 10 miles and doing some intense circuit training this morning. I’m gonna take it easy with the running this week because I have another race coming up on Sunday. After running all of these longer distances, I realized it’s been awhile since I did a fun 5k!

I figure with all of this training I should be able to (hopefully) make this 5k a PR before I venture off to Oz. The Baltimore Women’s Classic is an all-womens 5k in downtown Baltimore. This is its 35th year, but my first time participating in it. This will also be my mothers first 5k! We’re running as a mother-daughter team. I’m hoping she’ll get bit by the racing bug too.

Before my workout I had an awesome breakfast.

Vegetable heaven.

Egg white scramble with spinach, shroomies, shredded zucchini, sun dried tomatoes, and goat cheese.

I sautéed the veggies (expect for the tomatoes) on the pan until the spinach was cooked. Then I added the egg and topped with the tomatoes and cheese towards the end.

Lots of snackage throughout the day…

BBQ Mango Tempeh deliciousness

Toasted Whole Food’s harvest bread, tempeh, barbeque sauce, mango

After dousing it in barbeque sauce I baked the tempeh at 350 for 15 minutes. I put the tempeh on top of the toasted bread and topped it with some fresh mango chunks and more barbeque sauce. The Mango + Barbeque combo rivals that of chocolate and strawberries, Jack and Jill, peanut butter and banana. Okay maybe not that last one.

Another amahhzing flavor combination. Brie and Apple. Brie and any fruit for that matter.

Toasted apple and brie on Atwaters sunflower flax bread. Looks suspect, tastes delicious.

 

I’ve been on a wild goose chase lately trying to track down the right suitcases to bring with me to Australia. I can bring two suitcases but they can’t total more than 106 inches together and each individual piece cannot total more than 62 inches. This sounds more like a riddle than a baggage requirement.

      I keep forgetting they’re vegan too! It just ends up happening. I’ve been doing some research on Oz and I think they can be pretty veg friendly

    Your blog is awesome and I passed your link on to some my of my healthier friends. I too have a group of friends running in the 5k on Sunday. This is their first one, however I believe they are so ready for it. Good luck to you and momma! Your pics are awesome and most of it looks so delicious that I may even try a few of them myself.

    We bbq every weekend if the weather is nice and here in CA that’s almost every weekend. I love the food, the smell, being outside with good friends and family.
