I’ve broken out of the quinoa cycle temporarily.
I am a creature of variety.
And I needed a vessel for me vegemite.
Enter the random -what-can-I-make-with-whats-left-in-the-fridge toastie.

Still brown baggin it, still whistling while I work.
I toast both pieces of bread whilst I multitask getting ready for my day.
I like my toast very brown, not burnt…but almost.
Once they’re nice and crispy I top with…
Avocado, Onion, Tofurkey, Swiss, S&P, and Vegemite
Then it re-enters the toaster (open face) at a lower setting for a bit so the cheese can melt.
Slice it diagonally because its just better that way.

I’m obsessed with Alpine Valley’s Seven Grain Bread I bought from Sunflower Market.
After a fresh loaf of bread, this is now coming in second. It’s a bit seedy and thick, perfection.

It took me a little while to post because I was still figuring out the best place for lighting in the house. But then, but then we got our new kitchen table. This thing is glossy and I intend on taking all my food shots on it. Woop!
I think Ashley was right, these are sweet enough on their own! I’m omitting the sugar all together next time.
