Whistling While I Work

I’ve broken out of the quinoa cycle temporarily.

I am a creature of variety.

And I needed a vessel for me vegemite.

Enter the random -what-can-I-make-with-whats-left-in-the-fridge toastie.

Still brown baggin it, still whistling while I work.

I toast both pieces of bread whilst I multitask getting ready for my day.

I like my toast very brown, not burnt…but almost.

Once they’re nice and crispy I top with…

Avocado, Onion, Tofurkey, Swiss, S&P, and Vegemite

Then it re-enters the toaster (open face) at a lower setting for a bit so the cheese can melt. Slice it diagonally because its just better that way.

I’m obsessed with Alpine Valley’s Seven Grain Bread I bought from Sunflower Market.

After a fresh loaf of bread, this is now coming in second. It’s a bit seedy and thick, perfection.

More Traveled Than Green Eggs & Ham

There was a lot of tortilla pizza going on this week.

Blame it on my affinity for tomato sauce and Daiya cheese.

Blame it on the ease of assembly.

Or blame it on the fact that I am extremely low on groceries and pizza is an easy way to use a bunch of random ingredients.

This pizza was too badass for a boring pizza slicer. I went with the cleaver.

Works every time

I always toast my tortilla before I top and retoast.

Tortilla Pizza: Tomato sauce, flaxseed, mixed greens, onion, Daiya, New Mexico Chili Power, S&P

I don’t think I’ve ever addressed this in the blog, but I figure since you guys think I’m a sodium addict I should do some explaining.

I am a fainter.

Since about grade 4, I just faint a fair bit. Blame it on the low blood pressure, but I’ve been fainting for so long I know how to see the warning signs and “save myself” so to speak. Funny colors, muffled hearing, cold sweat…

I have a handful of amusing (for other people) fainting stories.

I’ve fainted in three countries. I’ve fainted in a doctors office, in the laundry of a dorm, on the beach, in a school, on a plane.

Wow, I sound more traveled than Green Eggs and Ham. 

This may sounds like I faint alot but it’s probably only once or twice a year. No biggie. But the doctors always told me, sugar may be a quick fix, but sodium intake is for the long haul.

They weren’t telling me to start pouring msg down my throat but they were telling me to ignore the low-sodium craze. 

So, I do. Salt really brings out the flavor in everything too!

Granola Bar Mayhem

Before I start making granola bars of my own I thought I’d give  few recipes a try until I got comfortable with it myself.

So I looked in my database of recipes I’ve flagged over the past year and came up with the two best yet different granola bar recipe

Ashley’s monster bars and Jess’s birdseed bars

I got a mini loaf pan this weekend and used it for granola bar mayhem.

I pretty much followed the recipes on all of these but added an extra scoop of flax and chia here and there. Maybe a little protein powder. Experimentation, my dears.

Monster Bars – some topped with jam, some with jam in the middle of the mixture.
Birdseed Bars

Both distinctly different and tasty in their own way. I love anything seedy so the birdseed bars had that going on. And the malty flavor felt so…Autumn

I so wish that I had thrown in the cherries I had bought for this exact occasion. They were needing a chewy fruit in it to balance the walnuts.It took me a little while to post because I was still figuring out the best place for lighting in the house. But then, but then we got our new kitchen table. This thing is glossy and I intend on taking all my food shots on it. Woop!

The monster bars were fantastically chewy. And the banana almond butter combo was a clear winner. I think Ashley was right, these are sweet enough on their own! I’m omitting the sugar all together next time.

Funny, it kind of looks like Weetbix.
Much more trials and tribulations to come on this department, but they’re both definitely handy to have around the house this week and an easy thing to throw in my lunch box.
