Salted Maple Rice Krispies (v)

I had a bunch of vegan marshmallows left over from a different recipe trial and was trying to figure out what to do with them all.

I decided to go with the classic – Rice Krispie Treats

But with a more complex flavor twist – Salted Maple.

Plus it just happens to be gluten-free and vegan. Shazam.

Salted Maple Rice Krispies (v)

  • 1 bag of vegan marshmallows (I used Dandies)
  • 3 T Earth Balance butter
  • 1/3 c water
  • 1/2 c maple syrup (the good stuff! as close to Canadian as you can)
  • 2 t salt (or more if you like it extra salty)
  • 4 to 5 c of puffed rice (or regular rice cereal)
  1. Heat butter and water in a pot until dissolved
  2. Add maple syrup and salt until dissolved
  3. Add marshmallows until dissolved
  4. Take marshmallow mixture off the stove and slowly stir into a bowl of puffed rice
  5. Press into a parchment paper lined pan and store in the refrigerator

This photo makes me laugh because its looks like a vat of those cotton pieces they put in your mouth at the dentist!

The Marshmallows may take a little while to dissolve in the maple syrup mixture

If you want a more nutty flavor  you can go the extra mile and add some of Justin’s Maple Almond Butter. It would be delicious and a perfect fit into the recipe (and would probably make a more congealed fit)

  • any other type of chopped nut
  • melted chocolate
  • Sprinkles
  • Cinnamon Sugar

Someone once asked me why I chose to bake vegan all the time if I am not a strict vegan myself. Honestly, it’s just easier. Not to have to have eggs, butter, milk etc… on hand makes things a lot simpler. All I have to have is flax, chia, applesauce, and bananas, which I always have stocked anyways.

Plus, I love a challenge. So much of the world is vegan or gluten intolerant so the way I see it, my treats can be enjoyed by all! Or at least easily altered.

I think I’m going to enjoy a salted maple krispie with some salted hot chocolate while I watch the snow fall today…while seated next to the space heater.

    Casey, this is incredible! Having no access to vegan marshmallows I’d have to make these in an omnivorous style, but oh well! Deliciousness will out!

      omnivore it up! I was just trying to use up the dandies. Hopefully you will be enthralled by the cottonballness of the mallows too :)

        I’m sure I will be. Just have to finish the three containers of treats currently in my freezer first :P But I have an almost-full box of rice bubbles in my pantry that I need to get rid of, so I must!
