Fig Butter, Brie, Tofurkey Toastie

I’ve wanted to make this exact creation since I bought Trader Joes Fig Butter and now I’ve made it three times over.

By the way did you know its considered a fruit butter if there is more fruit than sugar in it?

The things you learn from a label…

Trader Joes Fig Butter, Tortilla, Tofurkey, Brie

  • ~1/2 T Trader Joes Fig Jam
  • Torilla of choice
  • Tofurkey (oven-roasted)
  • Brie

I made one half plain (on the left), untoasted/melted. It was delicious but….

Meet its sexier younger sister

I am more partial to a crispy crust but I wanted to try it out both ways to see which was better. Brie is one of those cheeses that may always be best slightly melted.

If you are a meat eater turkey would be equally as delicious, and if you don’t do the whole faux meat thing I would add some chopped chickpeas for added protein while not taking away from the flavor combo.

I love my dehydrator.

Quite possibly the most fun piece of machinery of 2012.

It’s so ridiculously easy, don’t be scared of the dehydrator.

It even provides a nice white noise overnight.

I sliced up a couple green and fuji apples and put them in the dehydrator overnight. Better than the ones in store because there is zero sugar!

Odd things: I don’t really care for cantaloupe, but I’ve had freeze dried cantaloupe and liked the flavor.

Dehydrated cantaloupe was a winner too!

I tried my hand at sweet potato chips but those were a major fail. I think I  need to use a peeler next time to make sure they are ultra thin.

Next up on the to do list is going to be carrot and sweet potato chips. Hopefully, they turn out this time.

The Snazberry tasted like Snazberry

I had a great weekend hosting my cousin, Saryn, who was visiting Denver for her interview for postgrad at DU.

Here’s the brief foodie recap….

City’o'City.

I’ve been to both City’o'City and Watercourse Foods now. I really really want to love them because every vego and vegan I know recommends them, and I’m willing ot give it another shot because I think I order the wrong thing every time.

Macro Plate: Togarashi blackened tofu with quinoa and wakame pilaf in miso broth with steamed greens, pickled carrot, and kimchi

The only flavor I could taste was salt and the tofu was a very odd consistency.

Saryn got El Jefe: burger with cheddar, sauteed mushrooms, onion rings, hot-sauce aioli and a fried egg

I snuck a couple bites and it was absolutely delicious. My dish paled in comparison to the homemade bun and crunchy onions.

So not all hope is lost for City’o'City

The next day we got to Root Down about five minutes before it opened in the hopes of snagging a table for brunch.

Apparently we were not the only ones with that idea

Introducing the hottest nightclub in Denver at 10am…..or just an insanely good organic and sustainable restaurant.

We ventured a block or two down to Lola Restaurant in the Highlands.

Famed for their flavors of mimosas.

Couldn’t resist the Willy Wonka theme: Snazberry Mimosa.

And guess what? The Snazberry tasted liked Snazberry.

We also got a banana pancake for the table to share.

Complete with banana creme! The best part.

Do this idea of a pancake for an appetizer. Pancakes are so rich for me, often I only need a bite or two.

The menu wasn’t too veg friendly but thankfully one of the veg options sounded awesome.

scrambled egg-vegetable migas, tortillas, black bean refritos, chile rojo

It was kind of luke warm once we got it, but I appreciated the house made tortilla which was my favorite part.

Saryn’s friends and I did an excellent job of swaying her decision to the rockies. Hopefully I’ll another family addition to CO in the fall!

Now off to an early bedtime!
