Peanut Butter Quinoa Cookies (gluten, dairy, and egg free)

I was initially inspired by this recipe, but after a few tweaks whilst making them and the consistency and flavor just wasn’t right.

Plus I thought they’d be excellent in the dehydrator. I made two batches one for the dehydrator one for the oven on a low heat.

I love how they turned out in the dehydrator. The perfect texture of crispy on the outside and chewy in the inside, and the almond flavor came through a bit more. I’m still not 100% satisfied with the recipe and I want to try a cinnamon raisin version too. But they’re definitely good enough to share and have one amazing ingredient list.

Peanut Butter Quinoa Cookies (egg, dairy, and gluten free)

  • 2 c cooked quinoa
  • ½ c almond butter (or other nut butter)
  • ¼ raw honey
  • ½ c oat flour (or other flour)
  • ½ c oats
  • ¼ c cacao nibs or carob chips
  • ¼ c ground flax
  1. Mix the cooked quinoa, almond butter and honey in a bowl
  2. Mix in the oats, flour, and flax
  3. Fold in the cacao nibs or carob chips
  4. Oven option: Bake at 250 F for 45 minutes or until desired texture is reached
  5. Dehydrator option: Cook on 115 for 8 hours

These are so much hardier than a regular cookie and the nuttiness of the quinoa is perfectly complimented by the nut butter. I strongly recommend the dehydrator version but if you don’t have one just put your oven on the lowest temperature it goes. (mine happened to be 250)

Spotted

I had some of that raw granola for breakfast. Drowned in almond milk of course.

I have become an almond milk now and Whole Foods 365 brand, unsweetened is la creme de la creme.

I mentioned yesterday that it had a froot loop like taste. I forgot to say that it was orange and cinnamon which was responsible for it. I don’t even think I detected orange or cinnamon when I ate it as a child (but that wasn’t often either)

True story: I feel like Gossip Girl when I find new food products that I’ve read about from Expo West.

Spotted: Two new flavors of Popchips and Daiya’s new cheese wedge!

I found these at Cost Plus World Market. I haven’t tried the sweet potato but the thai chili was good, but not great. I have higher hopes for the sweet potato.

I have an undying love and allegiance to Daiya. When they unveiled their new cheese wedges I’m sure every vegan in America did a little heel click.

Myself included.

I couldn’t find the jalapeno flavor (drool) but I was able to try the jack.

It is pretty damn identical to a mozzarella consistency and it melts even better than the regular shreds.

Unlike the shreds though I don’t think it tastes quite as good raw. So this wedge will be reserved for pizzas, toasties, etc… I’m not sure if it can be frozen like the shreds too.

The packaging was super nifty in that all I had to do was press the label back to seal it. Nicely done.

In the meantime I will still be awaiting when one of the 20 Whole Foods in Colorado (I’m not even joking, its semi-ridiculous…) carries the jalapeno

The Breakfast Challenge

So that breakfast challenge that was won by the smoothie? Here were the other contenders

Blueberry Power  Muffins made with almond & coconut flour and almond butter.

Tasty but more of a snack than a meal for me.

Also made in “muffin top” version

I didn’t realize my first batch was missing the blueberries until they were out of the oven.

So nekkid!

I do love the fact that they freeze well and would be a great fuel-in-a-pinch before a workout.

Dehydrator Granola!

Only solidifying my allegiance to the dehydrator. This was fun.

Full of seeds and a froot loop like taste.

So delicious drowned in almond milk.

So I know your all bummed out since I can’t share these recipes since they belong to Katie. But lucky for you these recipes have inspired me to take their basics and put my own spin on it. Dehydrator granola has opened up a whole new world for me.

Question: Whats your pick for a better breakfast. A Smoothie, a Muffin, or Seedy Granola?
