Ninja Magic and Blackberry Almond Smoothie

10 May

Green Smoothies tend to all look the same though they taste very different. I call these power smoothies because they’re packed with nutrients and tons of protein so they keep you energized and full for a long time.

And I’ve crossed Vitamix off of the “things I want” list because the ninja gets the job done.

Coffee Peanut Power Smoothie

  • 1/2 c almond milk
  • 1/2 c coffee
  • 1/4 c water
  • 1/4 of an avocado
  • 1 T peanut flour
  • 1 T flaxmeal
  • 1 T hemp seeds
  • 1/2 t Maca
  • 1 t vanilla extract
  • 1 c ice
  • handful of spinach
  • pinch of salt

Spirulina smoothie

Warning: do not use spirulina in your smoothie, unless you’re prepared for an extremely grassy flavor and turns your smoothie dark green fast.

Some kind of version of an elvis. I definitely missed the avocado texture wise.

Banana Peanut Power Smoothie

  • 1/2 c almond milk
  • 1/2 c water
  • 1 very ripe frozen banana
  • 1 T plant based protein powder
  • 1 T peanut flour
  • 1/2 t cinnamon
  • 1 t vanilla extract
  • 1/2 t Maca
  • 1 T flaxmeal
  • 1 T hemp seeds
  • 1 c ice
  • handful of spinach
I swear I create brilliance every time I’m about to leave somewhere and have literally nothing to work with for a morning meal. This one’s going in the books.

Blackberry Almond Power Smoothie

  • 1/2 c almond milk
  • 3/4 c water
  • 1 T flax
  • 1 T hemp
  • 1/2 t maca
  • 2 T cashews
  • 1 t almond extract
  • 1/2 c blackberries
Blackberries and almond flavoring were meant to be together. Almond extract is my new favorite smoothie addition and it should be yours too.

Question: Any smoothie flavor combo suggestions while I’m creating ninja magic?

Smoothielicious

1 May

I finally know what also the huh-bub regarding smoothies is all about. Better late then never!

I have my ninja blender to thank for that. I bought this model at Bed Bath & Beyond with the handy-dandy 20% off coupons they give out like they’re going out of style.

This model is magic bullet like. It comes with three individual grab-n-go cups and also a larger blender for making big batches of smoothies or dough, etc…

The difference maker of the ninja products is that the blade is at the bottom, not the top of the blender, so all of the ice is blended easily. Just 5 or 6 pumps and its smoothielicious.

In the mix:

  • Almond milk
  • coffee
  • avocado
  • hemp seeds
  • flaxmeal
  • spinach
  • cacao
  • protein powder
  • maca
  • salt
  • ice

This specific recipe came from Katie at Rooted Wellbeing‘s Whole Foods cooking class on power breakfasts. I took her breakfast challenge and tried each of the three breakfasts to see what my body responded best too. Obvi, the smoothie won out.

Problem solved.

So freaking delicious but I forgot one of the basic rules of smoothie making. I had no straws on hand. Smoothies aren’t quite as fun with a spoon. Or spilling all over your face.

The avocado makes it super creamy which I love. The hemp, flax, and protein powder give this staying power. I was stuffed for a long, long time. It kept me from feeling snacky the whole day and night. And it was a nice cooler in this 80 degree heat.

I used Life’s Basic protein powder which is vegan and derived from pea and rice protein. I sampled it at a grocery store and was sold ever since.

Welcome to my life Green Monsters. I may or may not be having you every single morning.

Lavender Lemon Donuts (v)

9 Mar IMG_8096

Today I present to you two recipes: Lemon Frosted Lavender Donuts and Lavender Frosted Lemon Donuts

Both are vegan and gluten free. Yowza!

Before I get into the nitty gritty of the recipe, lets talk a bit about lavender.

I used to be intimidated by the ingredient but it couldn’t be easier. I’ve been experimenting with it a lot lately.

The trick is in the steeping process as inspired by this source I stumbled upon

Use a coffee filter as a “tea bag” by placing the lavender in the coffee filter and dunking it into warmed milk and letting it sit for 10-15 minutes. This makes the process much less messy! And it is so fragrant.

I tried several different frosting recipes, and luckily enough the one I thought up from scratch worked the best and gave the flavor I was looking for.

The main ingredient is full fat coconut milk, which I’ve been using like crazy. Make sure you don’t get “lite” coconut milk! Sunflower market gets my vote for the coconut milk with the best flavor.

Lemon Donut Base

makes about 8 donuts and 20 mini donuts

adapted from lemon cake donuts

  • 1/2c oat flour
  • 1/2c brown rice flour
  • 3T coconut flour
  • 3T walnut oil
  • 1/4c sucanat
  • 1.5T ground flax meal plus 3 T water (flax egg)
  • 1/4c unsweetened applesauce
  • 1/3c unsweetened almond milk
  • 3T lemon juice
  • 1t vanilla extract
  • 1/2t salt
  • 1t baking powder
  1. Combine flax and water in a small bowl and let sit for 1-3 minutes
  2. Combine dry ingredients
  3. Combine all wet ingredients (including flax egg)
  4. Bake in a greased donut pan at 375 for 20~ minutes

Lemon Donut with Lavender Frosting

It was just bursting with Lemony Flavor

Lavender Frosting

  • 3/4 c coconut fat (plus a few T’s of the milk at the bottom)
  • 3/4 c powdered sugar
  • 1/4 c milk of choice
  • 1 T lavender (should be easy to find. I got mine at a local farmers market)

  1. Steep lavender in a coffee filter in milk for 10-15 minutes
  2. Wring out the lavender and discard
  3. Combine coconut fat and powdered sugar in a bowl, slowly dd the lavender infused milk
  4. Dip donuts into frosting and let set

The steeping process

All together now!

Lavender Donut Base

These were a tad more cakey, but an interesting twist on a flip flop of the lemon-lavender flavor combination. These just screamed tea party to me.

Lemon Frosting

  • 3/4 c coconut fat (plus a few T’s of the milk at the bottom)
  • 3/4 c powdered sugar
  • 1 T lemon juice

Feel free to swap em around and have an all lavender donut or an all lemon donut

Also feel free to try Justin’s new line of Candy bars which hit Whole Foods nationwide (except Florida-dwellers) this week!

It’s Justin’s organic answer to Snickers: 25% less sugar, 50% more protein, and 100% more fiber than a Snickers. aaand its also Gluten-Free :)

I’ve tried them all and they are so delicious, Snickers should be shaking in its wrapper.

Take a gander at the copy on the back of the label, you might just recognize that writing style ;) .

Expect a full review of the entire line in the next week or so.

That’s all folks. Have a great weekend!
