So I’m not gonna beat around the bush with this one.
This next recipe is not exactly the healthiest (one of the ingredients is chock full of palm kernel oil) but it is healthier than its predecessor. Nor is it very pretty, but it is affordable and delicious. Plus there is room for flavor customization.
My roommate is obsessed with the yogurt almonds from the bulk bins at Whole Foods. When they raised the price a bit I thought of a new challenge. Create our own yogurt almonds. How hard can it be?
It only consisted of three ingredients. White Chocolate Bark, Greek Yogurt, and Almonds
I decided to do a few flavor variations as well. Plain, Blueberry, and Pomegranate. I also used different types of greek yogurt for each flavor.
Plain – Fage
Blueberry- Voskos
Pomegranate- Greek Gods
The actual process of making the yogurt almonds is easy, its the assembly that is rather hard.
I’m ball parking these measurements, but as long as the ratio is close it should be a no-fail
Yogurt Almonds
- 1/2 lb white chocolate bark
- 1/4 c greek yogurt
- 1 c almonds – or as many almonds as you can get covered!
- melt the white chocolate bark in the microwave (about 2 minutes) stirring frequently

- Add in desired yogurt

- throw in the almonds and coat them
- Place on wax or parchment paper and make sure almonds are divided so they don’t clump together. Your hand will get very messy in this part.
You can either set & store them in the fridge or the freezer- I liked the freezer better because the almonds didn’t melt in your hand quite as much and the cool temperature was nice.
The Greek Gods Pomegranate yogurt had a slightly different texture which excelled when sticking to the almonds.
I don’t know how whole foods makes them look so perfectly spherical and rounded, but Addie and I both think my version tastes better. Way more yogurty!
Feel free to substitute anything- raisins, peanuts, strawberries, pretzels, that you think would be delicious covered in yogurt. I know I’m going to try my hand at a few of the above as a birthday present next weekend.

Although the plain ones with Fage tasted great, their coating texture was a bit more gritty for some reason.
The pomegranate ones took on the color of their flavor which I liked. The blueberry ones tasted like the berry but didn’t look the part.
Overall another good day at the office kitchen.
