Insatiably Affordable

So I’m not gonna beat around the bush with this one.

This next recipe is not exactly the healthiest (one of the ingredients is chock full of palm kernel oil) but it is healthier than its predecessor.  Nor is it very pretty, but it is affordable and delicious. Plus there is room for flavor customization.

My roommate is obsessed with the yogurt almonds from the bulk bins at Whole Foods. When they raised the price a bit I thought of a new challenge. Create our own yogurt almonds. How hard can it be?

It only consisted of three ingredients. White Chocolate Bark, Greek Yogurt, and Almonds

I decided to do a few flavor variations as well. Plain, Blueberry, and Pomegranate. I also used different types of greek yogurt for each flavor.

Plain – Fage

Blueberry- Voskos

Pomegranate- Greek Gods

The actual process of making the yogurt almonds is easy, its the assembly that is rather hard.

I’m ball parking these measurements, but as long as the ratio is close it should be a no-fail

Yogurt Almonds

  • 1/2 lb white chocolate bark
  • 1/4 c greek yogurt
  • 1 c almonds  – or as many almonds as you can get covered!
  1. melt the white chocolate bark in the microwave (about 2 minutes) stirring frequently
  2. Add in desired yogurt
  3. throw in the almonds and coat them
  4. Place on wax or parchment paper and make sure almonds are divided so they don’t clump together. Your hand will get very messy in this part.

You can either set & store them in the fridge or the freezer- I liked the freezer better because the almonds didn’t melt in your hand quite as much and the cool temperature was nice.

The Greek Gods Pomegranate yogurt had a slightly different texture which excelled when sticking to the almonds.

I don’t know how whole foods makes them look so perfectly spherical and rounded, but Addie and I both think my version tastes better. Way more yogurty!

Feel free to substitute anything- raisins, peanuts, strawberries, pretzels, that you think would be delicious covered in yogurt. I know I’m going to try my hand at a few of the above as a birthday present next weekend.

Although the plain ones with Fage tasted great, their coating texture was a bit more gritty for some reason.

The pomegranate ones took on the color of their flavor which I liked. The blueberry ones tasted like the berry but didn’t look the part.

Overall another good day at the office kitchen.

City Girl at Heart

For the latter end of Easter Break I went to visit a friend from Baltimore who is currently studying in Byron Bay.

The weather was really bad the whole time so I did not get to see a lot but thankfully there was a clear morning where I got to hike around the beach and up to the light house.

Before I left to walk around the beach I made an epic and filling brekky.

Oh stove-top oats, I’ve missed you so.

Instant does not hold a candle.

Just regular rolled oats and since bananas are now a hot (and expensivo) commodity, I used a lady finger instead.

I chopped up half of the lady finger in the cooking oats and saved the rest for the topping.

Some strawberry jam also made its way into the pot.

Overflowed the bowl with my delicious treat and topped it with a nut mixture of cashews, almonds, pepitas, walnuts, sunflowers seeds, sultanas, and the remainder of the lady finger.

Yeh, I think that’s enough energy to last me for the day.

So filling I couldn’t even finish the whole thing!

Homemade food is always so much more satisfying :) .

Byron is a major beach town, with surfing being its main attraction.

I was astounded that none of the surfer got hit! They were all so bunched up waiting for the waves.

My time in Byron was pretty, but not overtly exciting.

Guess I’m just a city girl at heart.

Coming back to Melbourne felt like home :) (No offense, Denver.)

Sinfully Sweet

It was Big/Lil week in the sorority. The gift basket item list was kind of sprung on us last minute.

This put me in a predicament.

(read: I don’t have a car….or free time)

So I decided to rest on my laurels….my culinary laurels that is.

Like any good gift basket I had to have a theme: Sinful and Sweet

For the “sinful” portion I looked to Mrs. How Sweet cause this girl is the expert on sinfully sweet

Double Fudge Oreo Crunch Cookies

Ooh they were sinful alright!

Changes I made:

  • Earth Balance Butter instead of regular
  • Instant Cocoa instead of Cocoa Powder
  • Brown Sugar instead of White

For the plain old “sweet” portion of the gift I made some of Ashley’s Banana Coconut Granola

Changes I made:

  • I omitted the hemp seed and pepitas
  • I also added an extra T of maple syrup in place of the brown rice syrup
  • I also threw in some dried banana chips towards the end of its baking.

This was absolutely incredible! I’m never buying store-bought granola again. I will almost always have all of the necessary ingredients on hand.

We also had to get matching items for us and our Littles.

I found out about that part very last minute, so I pulled a MacGruber

I made a packing peanut necklace!

It kind of looks like a lei right?
