Fun with Kale Chips

Whenever I’m unfamiliar with a method of cooking or an ingredient I always use a recipe until I’m comfortable enough to start messing around with it.

I broke in my dehydrator with a Sour Cream and Onion Kale Chip recipe from Thrive Foods (this is my latest go-to recipe book and everything so far is fab-u-lous)

I couldn’t believe how easy this was and why I have not done this sooner. Especially because it’s so cheap compared to the pricy kale chips in store.

I immediately whipped up two variations the next day.

Basically there is a nut base (either sunflower seeds or cashews) and then a bunch of spices among other things.

This one was nooch flavored.

  • ½ c sunflower and cashews
  • 1/3 c water
  • 1/3 c nooch
  • ½ t salt
  • ½ t pepper

I think this was my favorite….or maybe the sour cream and onion. Ah they’re all amahzing.

Curry Flavored

  • ½ c sunflower and cashews
  • 1/3 c water
  • 1/3 c nooch
  • ½ t salt
  • ½ t pepper
  • 1 T curry powder

The onion powder was an excellent addition

One of the thing I love about making these is that I can put them in that night, flip the on switch, and they’re ready for me in the morning. Or vice versa.

My next mission is to come up with a bunch more variations! I’m thinking old bay will be next. And also a lot more fun with the dehydrator.

Question: Any flavor suggestions while I’m at it?

Fun with Apple Cider

The name of the game is cider.

I was a woman on  mission for the perfect, localist cider to be featured in a few weekend “projects”

I asked a grocery store employee what the best local cider was that they had in stock. He got giddy when he directed my towards Big B’s apple cider.

Coloradans can get this at grocery stores or the Denver Urban Homesteadery.

Only 4.99 for the whole thing!

I had big plans for this cider…

I’ve been looking forward to these apple cider margaritas ever since I saw them on Jessica’s blog.

Most of my exams/papers/projects were on Thursday and Friday, so I was due for a bit of premature celebration.

I made a few for me and my housemate.

One of the tastiest drinks I’ve ever had. Partially due to how amazingly fresh this cider is. And also due to how perfect apple cider compliments the crisp air.

I’ll be bringing this recipe home for the holidays

The cinnamon sugar rim put this over the top. :)

Don’t you think I was done experimenting with the apple cider yet.

Remember this guy?

I had been meaning to replicate this simple drink since I was not about to shell out all of that cashola on some fancy bottled version when I already had all of the ingredients on hand.

Easy as apple pie.

Apple Cinnamon Cider Drink

  • 1/2 c apple cider
  • 1/2 c water
  • 1/4 c apple cider vinegar
  • 1/2 t sugar
  • 1/2 t cinnamon

Delicious and extremely nutritious

Question: Better cold weather drink- apple cider, mulled wine, or hot chocolate?

I love them all, but there is nothing like cozying up with some mulled wine on a snowy night

Cumin Spiced Greek Yogurt Dip

It snowed buckets last night and all throughout the day. This is the first time I’ve had a (poorly heated) house and a car in Colorado, so I wasn’t as fond of the first snow as I usually am. Maybe if I got a space heater to park next to with a cup of cocoa it would be prettier.

I did not dare use my car today so snackage was what’s-in-my-fridge creations.

An old favorite I used to do a couple of years back : Cumin Spiced Yogurt Dip

It’s really simple just add a bunch of cumin to some fage greek yogurt (this brand has the best tang and consistency I’ve found)

Splash in a little apple cider vinegar, salt and pepper.

Then get to dipping with some carrots, cukes, pita chips, etc…

Brr it’s still so cold and now all I’m craving is soup!

That will probably go away considering its supposed to spike back up to 60 tomorrow.
