Blueberry Vanilla Oats

It has been a very productive weekend.

I’ve gone from whiffing the golf ball to smacking it pretty consistently, and pretty far.

The farmers markets were kind of a bust except for some awesome strawberries.

I’ve also made my first pinterest creation. (Post to come)

It was edible. And it was the highlight of the Ravens gathering last night. Yeah, lets not talk about that right now….

I’ve also discovered the new key ingredient in my oats.

Vanilla Creamer!

A little really goes a long way. Only about a tablespoon or two per serving.

If you’re vegan So Delicious coconut milk creamer is what I had in mind when adding this.

I also added some flaxseed in the mix and topped it with blueberries

I stumbled upon this creation when I was making oats for my Dad in the morning.

I saw the creamer in the fridge and added a bit on a whim.

With some cinnamon and raisins, it didn’t even need any sweetener!

You so need to try this.

Question: Favorite oatmeal addition?

Flaxseed hands down. After that…Banana or blueberries: tough call.

Was daylight savings a godsend to anyone else?

Sleeping in an extra hour does a body good. I wish I had one of those every weekend.

I was sick on and off this whole weekend so meals mostly consisted of soup, hot cocoa, tea, etc…

It also consisted of a slack attack in the photo department.

I felt like I wasn’t getting my complete nutrition punch so I had an open faced egg sammie.

Nothing like a runny yolk to make you feel like you got some vital nutrients into your day.

Bit low in the grocer department, so it just consisted of onion, spinach, egg, bread, and a schmear of vegemite.

I’ve also been making a large pot of oats and portioning out a bit each morning. It’s so simple, all I have to do is heat is up, top it with almond milk and hunger is curbed until lunch time.

This also slashes my “getting ready” time and I get to sleep an extra 10 minutes or so. Totally worth it.

This particular mix has blueberries, bananas, walnut, and flax.

I also used a 3:1 ratio of oats to oat bran

Nothing keeps you full all morning like this.

I’m going to go bask in the glow of the most glorious defeat of the Steelers that I can remember.

And no amount of oatmeal is going to top that. Ever.

The Taste You Can See

It was my last weekend in America for a while.

I did a lot of packing and study, packing and studying. Rinse and Repeat.

I also enjoyed some of my obsession du jour’s . Or at least the one’s I can’t get as easy down unda.

Lemon Blueberry Flaxy French Toast

  • 1/4  t Lemon juice
  • 2.5 T Flax
  • 2 T Water
  • 4 T Almond milk
  • Cinnamon
  • 2 pieces of toast (I used apple cinnamon streusel)
  • Blueberries
  1. Combine flax, water, lemon juice, almond milk and cinnamon in a shallow bowl. Let sit for a minute
  2. Dip, Soak, & Make Flaxy French Toast
  3. Warm blueberries in the microwave so there’s a little sauce underneath.
  4. Top with warmed blueberries
  5. STUFF your face!

Hmm…. blueberry  juice?….Blue juice?…. Bluejuice!
