Baked Grapefruit

Inspiration can be found in a lot of places. Other bloggers, magazines, limited pantry items. This one was inspired like so many other. A Sale at the grocery store.

I don’t think I’ve had grapefruit in ages but the low sugar fruit just exudes springtime to me.

I decided to go the baked route:

Cut in half sprinkled with sucanat and cinnamon and baked at 350F for 20 minutes.

Dare I saw its better than a raw grapefruit?

Baking it definitely made it more dessert like.

Bamboo Steaming

I was actually surprised how much I’m growing to love and use my bamboo steamer.

It’s really rather simple compared to how it looks.

All you have to do is line which ever compartments you are using with parchment papers on put the steamer over a water filled wok. Ta-da perfectly steamed veggies.

Now that I’m comfortable using it I’m sure I’ll use the other compartments simultaneously for tofu/tempeh and fish once I’m a busy working girl. One-step dinner!

This time I just steamed some cauliflower and broccoli.

As a kid in Baltimore it was expected to douse your french fries with Old Bay, so obvi I thought to season my root veggies with the spice of the bay. The only downside of old bay is that it kinda of tinged by mashed cauli brown.

I’ve made this plenty of times now and it’s great with some garlic and paprika or cayenne I’m feeling spicy.

All you do is combine your steamed cauliflower with 1/2 c coconut milk in the food processor plus whatever seasonings you desire. Then serve with a dollop of Earth Balance Butter or Coconut Butter.

Ya know what else is even better topped with a dollop of EB coconut butter? And its also a lot prettier than brown.

Bright Orange.

This is probably my most satisfying treat right now. Yam with cinnamon and coconut butter.

Though I’m a bit strange and am not a fan of melted butter of any sort. So I have to wait for it to cool a bit first. I do the same thing with my toast. But doesn’t everyone have some odd habit like this?

I’m kind of late on the tuber train right now since its summer weather outside but this is the BEST post-workout treat.

Molasses Maple Oatmeal

What I’m digging lately – Molasses Maple Oatmeal

Molasses is crazy good for, eliminates the need to add much sugar, and gives the oats a complex flavor.

Depending on how much time you have to spare I have two versions.

The busy woman version and the lazy day version.

First up for the busy folk. This can either be made the night before and stored in the fridge. Or premade in the morning and then enjoyed at a later time. (It’s kind of better if it sits for a half hour or so)

  • 1/3 c oats
  • 1/4 c oat bran
  • 1 T chia
  • 1 T flax
  • 1 c +2 T of hot water or milk
  • 1 T Molasses
  • 1/2 T Maple Syrup
  • Cinnamon

I put flax and chia meal in everything, but it would work just as well without it. I also love the texture the oat bran/oat mix gives. But either or would do too.

If you have the luxury of cooking oats in a pot, this one gives a slightly but equally good consistency.

Same ingredients as before though a bit more water may be necessary.

Add the molasses, cinnamon, and maple in once the mixture has congealed a bit more.

I love to make a big batch on Sundays and then reheat it in the mornings for a quick brekkie.

It looks like dessert, but its just the right amount of sweetness to start off your day.

It’s also excellent drowned in almond milk.
