Chopping Veggies can be really enjoyable…
If you have the right knife.
I won this knife in a cooking competition (A la Masterchef) in Australia.
I have many nicknames for this knife. The cleaver. The machete…
You get the idea. Its big!
This baby cuts through ANYTHING, and easily too.
True story: My friend Dan wanted to see if I could throw an apple and have the knife slice through it.
Bam. Right down the middle. It was kind of awesome.
It was like real life Fruit Ninja!
Carrots and Celery…Prepare to meet your maker.
The chopped celery was for other fun things but the carrots were for this Cranberry, Apple, & Almond Quinoa.

I made it exactly as Angela did, except I added WAY more cinnamon
Because, as my Australian friends so lovingly pointed out: “My perception of Americans is that they love peanut butter and cinnamon on everything…”
My response: “Yup, pretty much sums it up”

Perfect when you are craving dessert at the end of the night but want something substantial to keep you from nibbling once your finished.
As I type this post I have gotten the “spinning wheel of death” over a dozen times. (Macbook users you know what I’m talkin’ about)
My computer is sick. The battery is nearing its end, the fan is on like it’s 100 degrees outside, and applications close out on me and freeze on a regular basis.
Oh, and exams are next week. Fantastic.
Not to worry though! I’m taking it to the doctor (aka Genius Bar) over the weekend.
Also consumed today: Random Veggie Stirfry

In the mix: chopped Eggplant, Onion, Spinach, Tomato and a ton of Old Bay
‘Cause everything’s better when topped with Old Bay
Twas scrumptious. Just what the doctor ordered
