Molasses Maple Oatmeal

16 Feb IMG_7745

What I’m digging lately – Molasses Maple Oatmeal

Molasses is crazy good for, eliminates the need to add much sugar, and gives the oats a complex flavor.

Depending on how much time you have to spare I have two versions.

The busy woman version and the lazy day version.

First up for the busy folk. This can either be made the night before and stored in the fridge. Or premade in the morning and then enjoyed at a later time. (It’s kind of better if it sits for a half hour or so)

  • 1/3 c oats
  • 1/4 c oat bran
  • 1 T chia
  • 1 T flax
  • 1 c +2 T of hot water or milk
  • 1 T Molasses
  • 1/2 T Maple Syrup
  • Cinnamon

I put flax and chia meal in everything, but it would work just as well without it. I also love the texture the oat bran/oat mix gives. But either or would do too.

If you have the luxury of cooking oats in a pot, this one gives a slightly but equally good consistency.

Same ingredients as before though a bit more water may be necessary.

Add the molasses, cinnamon, and maple in once the mixture has congealed a bit more.

I love to make a big batch on Sundays and then reheat it in the mornings for a quick brekkie.

It looks like dessert, but its just the right amount of sweetness to start off your day.

It’s also excellent drowned in almond milk.

Brown Baggin’ it

31 Jan

I told you I was going to put that dressing on everything.

I usually pack lunches for both school and work. It’s really rather simple the key is just planning ahead.

Coz I cannot be bothered to do anything slightly comprehensive in the early morning, unless its routine.

Lunches are usually sandwiches/quesadillas, quinoa mixtures of some sort, and muesli/oatmeal. All of these travel really well and have a good ratio of nutrients.

The winning combination:

Arugula/spinach mix, Rainbow Quinoa (this is just regular quinoa mixed with black and red quinoa) Maple Cider Dressing, Nooch, raw Mushrooms, and Onion

I decided it was missing something and threw a bit of fresh feta on top. But for the record this quinoa/salad/dressing combo can remained untouched.

The quinoa made this salad “stick to my bones” as the saying goes. Which really is a rather odd saying.

The best part was it got to marinate in the fridge overnight before I took it in for lunch.

The Sweeter Side of Chickpeas

10 Jan

Yesterday you saw the Savory crepe/tortilla/pizza today is the sweet crepe/tortilla/pizza

Starting with a Recipe for

Banana Maple Walnut Chickpea Crepes.

Same water to chickpea flour ratio of 1:1

But then I add 1 T of Maple Syrup (or Honey if you prefer)

Then it gets fun…

Banana filling, meet yogurt.

I think you’re gonna get along just fine.

I mixed about 1/2 a Tablespoon in with some yogurt.

I love buying plain yogurt and mixing in my own sweeteners like jams and syrups. Right when I saw this tart filling in my parents fridge I knew that was what I wanted to do with it.

It made it just sweet enough without being that overpowering.

I spread the yogurt/banana mixture on top of the spongey chickpea crepe

Topped it with Sliced Banana, Walnuts, and cinnamon.

This is probably one of my favorite creations to date.

It’s so delicately perfect.
