Eat, Pray, Love Style

Didya miss me?

I know I did.

After exams finished, I had about a week of celebrating, then a week of relaxing.

But then its off to the next adventure!

Only 3 more days until I head off to Eat, Pray, Love territory.

That’s right folks, I’m going to Bali, Indonesia!!

There’s so much that I’m excited for: hiking, beaching, snorkeling, monkeys, scootering, temples, museums, hot weather, sand, and the list goes on. 

Right now I’m just focusing on that warm sun beating down on my skin. Though the Melbourne winter has proven to be anything but freezing and rainy thus far.

I’ll be a photographic rampage, so my big blogging comeback is on the brink!

I’m staying with a friend in Ubud whilst in Bali which is central and located among the paddy fields but plan to visit most northern parts of the island.

It’s amazing how many people in Australia have lived in, or visited Bali. It’s like the Cancun of the Southern Hemisphere.

I’ve gotten heaps and heaps of advice and suggestions, so its bound to be en exciting trip.

After Bali I will be heading to Sydney to stay with friends for a bit. Then its back to Geelong for a couple of days and then my final weeks in Melbourne!

I’m starting to come to grips with all of this ending in my own way now. I will admit I’ve had a few freak outs, but I’m back to normalcy now. Hmm, its beginning to sound like the five stages of grief…

Australia will always be in my heart and always be a part of me. It’s not the ending of a chapter because I’m sure I will find my way back here again, maybe even sooner than I imagine.

That might be enough nostalgia and emotion for one post.

A bunch more exciting things to share about the future once I arrive back from my travels, but I’ll most likely be recapping travels before the big reveal.

Hint hint: this time blogging will have food  and adventure pictures. Time to take this camera out of hibernation.

Rinse and Repeat

I jumped right back in the saddle this week.

Sport. Coffee. Uni. Socializing.

Rinse and Repeat.

Drinking coffee like it’s my job and loving every second of this addiction. I’m so young and reckless at times ;)

(You’ll hear more about the aftermath of the job interview later…when I hear back myself!)

At the moment I’m playing field hockey and softball for Queens. I’m contemplating going out for rowing and soccer starts in two weeks.

I’ve been to the gym once to do lifting, but needless to say I wont be needing it much with all the sport! I usually get up around 7:30 or so for practices but I only have Uni three days out of the week, which is nice so I don’t get too overwhelmed.

I’ve really missed playing field hockey competitively in high school so it’s really nice to get back into it.

For my non-sporty yet competitive side there’s a game of “assassins” starting up at Queens. Basically everyone gets assigned some one to “kill” or squirt with water until there is only one person remaining. There are a few rules thrown in to make it a bit harder. Oh, and freshers can’t win. Obv.

Keeping on the topic of sports: March Madness is fast approaching!

I still always try to get in the mindset of when I was in 4th grade and won a March Madness pool. I try not to do my research, but it is soo hard.

The best thing about March Madness is that it is unpredictable. The underdogs can beat the favorites. Buzzer beaters are perhaps the best moments in sports.

Now, I am a sports buff. But this year I’m going to take a different approach. You see my Australian friends do not know a whole lot about college basketball. They probably the equivalent to my 4th grade self.

In other news I am hoping to get my camera out of hibernation tomorrow so I can start showing you what I’m doing instead of just telling you.

Big. Fat. News.

So I’ve been beating around the bush for a month now. Thanks for bearing with me, as I had to keep mum for a few reasons.

But, alas, the cats outta the bag.

I’m going back to Australia!

And I’m not talking sometime in the distant future. I’m talking in less than a month.

Sorry Melbourne, looks like you’re going to have to try a little harder if you think you’ll get rid of me that easy!

It was a long and exhausting battle, but man oh man is it worth it.

Towards the last month or so of my study abroad, I started to get really uneasy that I would be leaving this place. I felt like my experience was being cut short.

I was starting to develop these relationships with some of the best people and I was even making some strong connections in the business world as well.

It hurt me even more that all of these amazing people were having a hard time letting me go too :(

5 months just wasn’t long enough…

Every scenario which I tried to make for myself just didn’t sit well with me. I finally came up with some crazy idea that I would finish Uni in Melbourne in November. Go back to Uni in Denver in January, then hop on the first flight after my exam and dive headfirst into Uni again in Melbourne.

So yeah, it’s a little unorthodox.

Yes, I will have been in Uni from July to June with only a 4 week break. But wouldn’t you be willing to work your ass off to take advantage of such an amazing opportunity?

I am going back to the same city (Melbourne), the same Uni (UniMelb), and the same college (Queen’s) where I lived.

So what does this mean for le blog?

  • Posts are going to be more sporadic, but I am going to try to get 3 posts up a week. (I’m not making any promises though)
  • I’m still going to try to keep up with all of your lovely blogs
  • I do not have a kitchen, I only have a fridge in my room and a “harry potteresque dining hall” where I live. I do not snap food photos in said dining hall
  • There will be more ‘life pics’ then ‘food pics’
  • I have invitations to come cook at friends flats. This makes me a happy girl and also leaves some potential for food bloggin’ pics from down unda
  • I WILL continue to frequent Melbourne coffee spots and food locales
  • Until then I am going to continue bloggin’ (and cooking) from good ol’ Denver

Today has been a very lovely day. I got invited to TWO honor societies and scheduled TWO (amazing) job interviews.

Three’s? Psh, great things clearly come in two’s

Toot, toot.

Hear that? Oh, it’s my horn.

 

Sooo just so this isn’t a completely food less post here a quick montage of some eats.

After all of the weekend stress my body was craving one thing today: VEGGIES

Veggie Galore: Stir-fry made with tomatoes, spinach, eggplant, mushrooms, onion, and a little bit of parmesan cheese sprinkled on at the end.

I’ve also been spritzing a bit of  balsamic vinegar on everything at the moment.

Vinegar: it’s soo hot right now. Acidity just makes all of these flavors pop! Expect to see it on a lot of things in the coming weeks. I foresee many veggies in my future.

Angela’s Pumpkin Sesame Cookies were also made at some point over the past week.

Warning: The batter of navy beans, pumpkin, vanilla and maple smells live vanilla heaven and is highly addictive when eaten straight outta the food processor.

Ok, we’ve all been bitten by the travel bug at some point.

What’s your dream destination?

Since I can knock Australia off the list, I’ll have to go with Thailand!
