Kitchen Sink Dinner Fun

A few things I always have on my shelf are: cans of beans, tomato sauce and dry quinoa. So when I’m too lazy to fill an empty fridge I can always rely on these to have a meal on hand.

Kitchen Sink Dinner Fun

  • 1 can of chickpeas (or other beans)
  • 1 c mushrooms
  • 1 small onion, chopped
  • 1/2 c tomato sauce
  • 1 T nutritional yeast
  • 1 T ground flax
  • 1 t salt
  • 1 t sriracha (optional)
  • 2 T feta/daiya (optional)
  • 1.5 c precooked quinoa (optional)
  1. Saute mushrooms and onions on a coated pan for around 5 minutes
  2. Add chickpeas, nooch, flax and salt
  3. Once chickpeas are heated add the tomato sauce and feta or daiya
  4. Remove from heat and combine with quinoa if you want a more stick-to-your-bones meal

Serve as is, on a bed of lettuce, or atop pasta. It makes great leftovers hot or cold!

other ideas for additions: meat crumbles, tempeh, rice, raisins, other veggies on hand

Chickpea Love

I originally made these “battered” chickpeas to use as a creative salad topper. But they were so tasty on their own I abandoned my salad idea and just kept these to munch on.

Two of my favorite things: chickpeas and nooch. I forgot how good chickpeas are warmed and it inspires me.

Be prepared to see a whole lot of chickpea love soon. I’m thinking tomato and feta…baked? And then something with sriracha. I haven’t used that spiciness in a while. And come to think of it these would be great dipped in a sriracha mayo

Operation sugar buster hasn’t been as hard as expected. Its crazy hot outside so of course I’m craving fruit, but I think this lower sugar business might be here to stay.

But once peach season hits, all bets are off!

Tuna, Apple, Nooch Trio

Another 70 degree day here in Denver.

I enjoyed my lunch outside for a change.

Not sure how I came up with this combo, but I’m pretty sure it started with  me wanting apples in my salad.

Kale Arugula mix, chopped Fuji apple, Nooch, Apple Cider Vinegar, Onion, Tuna, Mustard, Balsamic.

I mixed some tuna up with mustard and S&P before adding it to the salad.

Tuna, Nooch, and Chopped Apple are a trio made in heaven and will definitely be used again, maybe on a toastie :D

I’m getting a bit sick so I need to hit the sack early. I just popped a nighttime akla seltzer cold medicine thing my roommate gave me and its starting to kick in!
