Savory Oats, Conquored

I’ve wanted to like savory oats, I really have. But the few times I tried to make it, one spoonful was all it took to make me say “this is not right.”

My Mom had clipped out an article for me interviewing Chef Sang Yoon, a Los Angeles chef. I saved the article because one of his favorite recipes stood out to me. Savory oats made with egg, tofu, and sriracha.

Egg….Tofu….Sriracha. Three of my favorite things. If I was ever going to like savory oats- this was it.

I still added more sriracha after this – I like it spicy!

I was hoping to be able to break apart the yolk after it was plated. This made the meal so much more fun!

With only four ingredients this couldn’t be simpler. This recipe made a large serving in my opinion. I’d say about a serving and a half. You can either make it as is and have leftovers, or reduce the oats to 1/3 c.

This really tied me over. I’d happily eat it again for breakfast or dinner. Definitely fitting this one into my rotation.

Leftovers were mighty tasty, just had to re-spice them with more sriracha.

Here is Chef Sang Yoon’s recipe

  • 1/2 c oats
  • 4 oz soft tofu
  • 1 egg
  • sriracha  (and lots of it)
  • S & P

What to do

  1. Bring 1.5 cups of water to boil and add oats. Lower heat and simmer for 30 seconds
  2. Add tofu and break it apart.
  3. Add egg, stir whites into the pats to cook them. (Don’t break the yolk yet if you want it runny!)
  4. When egg is cooked to desired doneness remove from heat, season with S&P and as much sriracha as you can tolerate

Peanut Butter Quinoa Cookies (gluten, dairy, and egg free)

I was initially inspired by this recipe, but after a few tweaks whilst making them and the consistency and flavor just wasn’t right.

Plus I thought they’d be excellent in the dehydrator. I made two batches one for the dehydrator one for the oven on a low heat.

I love how they turned out in the dehydrator. The perfect texture of crispy on the outside and chewy in the inside, and the almond flavor came through a bit more. I’m still not 100% satisfied with the recipe and I want to try a cinnamon raisin version too. But they’re definitely good enough to share and have one amazing ingredient list.

Peanut Butter Quinoa Cookies (egg, dairy, and gluten free)

  • 2 c cooked quinoa
  • ½ c almond butter (or other nut butter)
  • ¼ raw honey
  • ½ c oat flour (or other flour)
  • ½ c oats
  • ¼ c cacao nibs or carob chips
  • ¼ c ground flax
  1. Mix the cooked quinoa, almond butter and honey in a bowl
  2. Mix in the oats, flour, and flax
  3. Fold in the cacao nibs or carob chips
  4. Oven option: Bake at 250 F for 45 minutes or until desired texture is reached
  5. Dehydrator option: Cook on 115 for 8 hours

These are so much hardier than a regular cookie and the nuttiness of the quinoa is perfectly complimented by the nut butter. I strongly recommend the dehydrator version but if you don’t have one just put your oven on the lowest temperature it goes. (mine happened to be 250)

Berry Good Oats

Happy 11-11-11 everyone. So does that make today lucky? Or unlucky?

I had an awesome internship interview yesterday, learned some pretty cool stuff. And also got home incredibly late and plopped myself in bed.

To track back to the morning…

Oats are still a breakfast staple. I’ve been making a big batch with no sweetener and adding a bit of sucanat on top once its heated since I find the oats lose most of the added sugar during refrigeration.

So instead of doubling the sugar I only add about a teaspoon of sucanat in the end.

Berry Good Oatmeal

I added 1/4 c of raspberry chia synergy in this mix!

  • 1 c oats
  • 1/2 c oat bran
  • 1/4 c chia synergy
  • 1/8 c berry flavored ground flaxseed
  • 1/2 c blackberries

Heated up in the microwave, topped with sucanat

Then drowned in almond milk

Bad news, the raw foods chocolate cooking class this weekend was cancelled :(

Looks like Saturday is going to be much more boring than anticipated.

But on the positive side, there’s a rain date already set up in Belmar in early December. So looks like I’ll have to rely on my own brainpower to come up with T-giving recipes.

This year the shin dig is being held at the ‘rents house. Which means I’ll be cooking up a bit more of a storm than I initially anticipated. Winning.

This weekend it is me versus the keyboard. I have about twenty pages and three project to be completed. Let the monk weekend commence.
