Fun with Kale Chips

27 Jan

Whenever I’m unfamiliar with a method of cooking or an ingredient I always use a recipe until I’m comfortable enough to start messing around with it.

I broke in my dehydrator with a Sour Cream and Onion Kale Chip recipe from Thrive Foods (this is my latest go-to recipe book and everything so far is fab-u-lous)

I couldn’t believe how easy this was and why I have not done this sooner. Especially because it’s so cheap compared to the pricy kale chips in store.

I immediately whipped up two variations the next day.

Basically there is a nut base (either sunflower seeds or cashews) and then a bunch of spices among other things.

This one was nooch flavored.

  • ½ c sunflower and cashews
  • 1/3 c water
  • 1/3 c nooch
  • ½ t salt
  • ½ t pepper

I think this was my favorite….or maybe the sour cream and onion. Ah they’re all amahzing.

Curry Flavored

  • ½ c sunflower and cashews
  • 1/3 c water
  • 1/3 c nooch
  • ½ t salt
  • ½ t pepper
  • 1 T curry powder

Sour Cream and Onion

The onion powder was an excellent addition

One of the thing I love about making these is that I can put them in that night, flip the on switch, and they’re ready for me in the morning. Or vice versa.

My next mission is to come up with a bunch more variations! I’m thinking old bay will be next. And also a lot more fun with the dehydrator.

Question: Any flavor suggestions while I’m at it?

Where Food Bloggers go to Play

1 Oct

Things are a little different in the Southern Hemisphere.

The crescent moon faces the other way in the sky.  S’mores are nonexistent. There’s Christmas in July.

And then there’s Spring Break, or mid-semester break as they call it. Mine occurred in mid-September and I spent it seeing as many beaches, cities, and reefs as I could handle.

First stop: Gold Coast

Though the beach was ALOT nicer. It did rain here and there. But I was in the sand listening to the waves rash on the shore. A bit of rain wasn’t going to ruin this.

Gorgeous view from the balcony of our room.

Sunset. And thus…my artsy sunset and landscape shots begin. Queensland has some of the most beautiful sunsets I’ve seen in my life.

My new roomie slash partner in crime, Signe, and I decided to head out for a little dip in the cooz. (Jacuzzi, for those of you new to my inordinate amount of abbreviations)

We went to the market to make a nice little spread for dinner:

Guac served on the half shell, Tasty cheese, Hommous, French Bread, Cherry Tomatoes

After an eventful night out on the town we were on our way to Brisbane.

Thaaats where the sun was hiding.

Not a cloud in sight and the sun was bru-tal.

We found a farmers market just near the water’s edge!

The wind was picking up and some of the stand looked like they were about to topple over.

I may be on vacation, but that doesn’t mean my inner food blogger doesn’t get snap happy.

Sidenote: Farmers Markets are where food bloggers go to play

Passionfruit samples. nom nom

I saw so many people walking by with giant avocados and mushrooms, I had to see what all the fuss (and the line!) was about.

Lovin the t-shirts too ;)

Behold: Avocado, Mushroom, and Cous Cous Salad topped with sour cream and chutney.

Gasm.

No, the flower is not edible.

No, I did not find this out by trying.

Another day, another dollar city. It was go, go, go the whole trip. I did find time to relax on beaches and boats though.

And of course, I did find my way into some mildly embarrassing crazy adventures.

Next stop: Frasier Island
