Baked Grapefruit

Inspiration can be found in a lot of places. Other bloggers, magazines, limited pantry items. This one was inspired like so many other. A Sale at the grocery store.

I don’t think I’ve had grapefruit in ages but the low sugar fruit just exudes springtime to me.

I decided to go the baked route:

Cut in half sprinkled with sucanat and cinnamon and baked at 350F for 20 minutes.

Dare I saw its better than a raw grapefruit?

Baking it definitely made it more dessert like.

Coconut Cream Covered Berries

Hey there! Have you entered my giveaway for some raw food from Food on Purpose?

You, haven’t? Well you certainly should!

Even though its winter I couldn’t think of anything more satisfying than some berries topped with cream when I got back from spin class.

Mixed Berries topped with the fat from coconut milk

This was such a great post workout snack because of all the healthy fats from the coconut milk.

I love the flavor or the milkfat but if you have a bigger sweet tooth than I feel free to add a sprinkling of sucanat or your sweetener of choice.

I know you can use the milkfat and whip it to make a whipped cream

I think the texture was fine as is I just stirred the cream for a bit….mostly because I was impatient and wanted my delicious treat!

If I was making a larger batch of whipped cream, or if I had an electric mixer I would make a more “whipped cream”

So my final words to you: get over this stigma with the word “fat”. Fat is not always bad. It is great for you in moderation. Case and point: nut butter, coconut, cashews, avocados. I rest my case.

Question: Whats your favorite fat?

Mine? You’d think I’d say nut butter knowing my personal history but its clearly avocado

Berry Good Oats

Happy 11-11-11 everyone. So does that make today lucky? Or unlucky?

I had an awesome internship interview yesterday, learned some pretty cool stuff. And also got home incredibly late and plopped myself in bed.

To track back to the morning…

Oats are still a breakfast staple. I’ve been making a big batch with no sweetener and adding a bit of sucanat on top once its heated since I find the oats lose most of the added sugar during refrigeration.

So instead of doubling the sugar I only add about a teaspoon of sucanat in the end.

Berry Good Oatmeal

I added 1/4 c of raspberry chia synergy in this mix!

  • 1 c oats
  • 1/2 c oat bran
  • 1/4 c chia synergy
  • 1/8 c berry flavored ground flaxseed
  • 1/2 c blackberries

Heated up in the microwave, topped with sucanat

Then drowned in almond milk

Bad news, the raw foods chocolate cooking class this weekend was cancelled :(

Looks like Saturday is going to be much more boring than anticipated.

But on the positive side, there’s a rain date already set up in Belmar in early December. So looks like I’ll have to rely on my own brainpower to come up with T-giving recipes.

This year the shin dig is being held at the ‘rents house. Which means I’ll be cooking up a bit more of a storm than I initially anticipated. Winning.

This weekend it is me versus the keyboard. I have about twenty pages and three project to be completed. Let the monk weekend commence.
