Fun with Kale Chips

Whenever I’m unfamiliar with a method of cooking or an ingredient I always use a recipe until I’m comfortable enough to start messing around with it.

I broke in my dehydrator with a Sour Cream and Onion Kale Chip recipe from Thrive Foods (this is my latest go-to recipe book and everything so far is fab-u-lous)

I couldn’t believe how easy this was and why I have not done this sooner. Especially because it’s so cheap compared to the pricy kale chips in store.

I immediately whipped up two variations the next day.

Basically there is a nut base (either sunflower seeds or cashews) and then a bunch of spices among other things.

This one was nooch flavored.

  • ½ c sunflower and cashews
  • 1/3 c water
  • 1/3 c nooch
  • ½ t salt
  • ½ t pepper

I think this was my favorite….or maybe the sour cream and onion. Ah they’re all amahzing.

Curry Flavored

  • ½ c sunflower and cashews
  • 1/3 c water
  • 1/3 c nooch
  • ½ t salt
  • ½ t pepper
  • 1 T curry powder

The onion powder was an excellent addition

One of the thing I love about making these is that I can put them in that night, flip the on switch, and they’re ready for me in the morning. Or vice versa.

My next mission is to come up with a bunch more variations! I’m thinking old bay will be next. And also a lot more fun with the dehydrator.

Question: Any flavor suggestions while I’m at it?

Breadwinner

So lets not talk about that Raven’s game from yesterday mmkay? My boys played a good, clean game and its heartbreaking to watch them go out that way.

I digress…

I don’t know whats gotten into me lately but for some reason I’ve been tackling my new years resolutions like its my job. I usually make long-term goals so its crazy thinking I’ve already ticked some off and its only a few weeks into January.

I had a few blog goals and one of them was that I wanted to finally make my own bread.

I took a stab at this sprouted bread recipe I’ve had earmarked from lordknowswhere.

I started the process a few days before baking by soaking a mixture of wheatberries, speltberries, chickpea, and lentils for a day then draining it and letting it sit two more days.

I added a bunch of sunflower seeds and pepitas in the mixture and on top too once it was time for baking.

The bread was very dense and I expected the worst. But it was actually really good! Very hearty and seedy, just the way I like it.

This particular recipe was definitely a hassle. It took a long time and made a mess of the kitchen. Though I think this is due to the fact that I have a small/old food processor . I’ve been wanted to get the ninja (super cheap and highly rated find at Target or Bed Bath btw!!)

I think that baby would make this breadwinner a lot easier to make and would result in a bit of a fluffier bread, since I was mostly beating the dough by hand.

Bread makes biceps.

The better news? This sprouted bread tasted even better the next day.

Day-old bread never sounded so good!

Toasted with a schmear of Earth Balance Butter

This is my new favorite brekkie.

For my first crack at homemade bread, I am very optimistic and will try my hand at many bread recipes in the future.

Plus, nothing. and I mean nothing. beats the smell of yeast as bread bakes. gahhhhhh

Question: Any good bread recipes out there for me?

City Girl at Heart

For the latter end of Easter Break I went to visit a friend from Baltimore who is currently studying in Byron Bay.

The weather was really bad the whole time so I did not get to see a lot but thankfully there was a clear morning where I got to hike around the beach and up to the light house.

Before I left to walk around the beach I made an epic and filling brekky.

Oh stove-top oats, I’ve missed you so.

Instant does not hold a candle.

Just regular rolled oats and since bananas are now a hot (and expensivo) commodity, I used a lady finger instead.

I chopped up half of the lady finger in the cooking oats and saved the rest for the topping.

Some strawberry jam also made its way into the pot.

Overflowed the bowl with my delicious treat and topped it with a nut mixture of cashews, almonds, pepitas, walnuts, sunflowers seeds, sultanas, and the remainder of the lady finger.

Yeh, I think that’s enough energy to last me for the day.

So filling I couldn’t even finish the whole thing!

Homemade food is always so much more satisfying :) .

Byron is a major beach town, with surfing being its main attraction.

I was astounded that none of the surfer got hit! They were all so bunched up waiting for the waves.

My time in Byron was pretty, but not overtly exciting.

Guess I’m just a city girl at heart.

Coming back to Melbourne felt like home :) (No offense, Denver.)
